Spice Cake Sandwich Cookies with Cream Cheese Frosting

Delight in the warm flavors of spice cake sandwiched together with a luscious cream cheese frosting. These cookies are perfect for special occasions or cozy moments.

Ingredients:

  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/4 teaspoon ground cloves

  • 1/2 cup unsalted butter, softened

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar, packed

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1/2 cup buttermilk

  • 1/2 cup finely chopped pecans or walnuts optional

  • Cream Cheese Frosting:

  • 8 oz cream cheese, softened

  • 1/4 cup unsalted butter, softened

  • 2 cups powdered sugar

  • 1 teaspoon vanilla extract

Instructions:

Preheat the oven to 350F 175C


Line baking sheets with parchment paper


In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves


In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy


Beat in the egg and vanilla extract until well combined


Gradually add the dry ingredient mixture to the wet mixture, alternating with buttermilk


Mix until just combined


Fold in the chopped nuts if using


Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart


Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden


Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely


For the cream cheese frosting, beat together the softened cream cheese and butter until smooth and creamy


Gradually add the powdered sugar and vanilla extract, and continue to beat until well combined


Once the cookies are completely cooled, spread a generous amount of cream cheese frosting onto the flat side of one cookie and sandwich it with another cookie


Repeat with the remaining cookies

Ingredients:

  • 2 cups all-purpose flour

  • 2 cups milk

  • 3 eggs

Instructions:

  • 1 lb pulled pork

  • Tortilla chips

Instructions:

Set the oven temperature to 375F 190C


Spread a layer of tortilla chips in a large ovenproof skillet


Add half of the pulled pork, half of the cheddar and mozzarella cheeses, diced pineapple, diced red onion, diced red bell pepper, and chopped cilantro to the top of the chips


With the remaining ingredients, repeat the layering process until you reach the top and add another layer of chips


To help the chips get crispy, lightly mist the top layer with cooking spray


After preheating the oven, place the skillet inside and bake for 15 to 20 minutes, or until the nachos are thoroughly heated and the cheese is melted


Make the pineapple guacamole while the nachos are baking


Mash the ripe avocados with a fork in a bowl


To the mashed avocados, add diced pineapple, diced red onion, diced jalapeo, lime juice, salt, and pepper


Mix everything together


Take the skillet out of the oven after the nachos are done baking and allow it to cool slightly


Top each serving of Hawaiian Pulled Pork Skillet Nachos with a heaping portion of pineapple guacamole

Sake-Glazed Salmon with Jasmine Rice

Ingredients:

  • 4 salmon fillets

  • 1/2 cup lovely-package-ricenoir-sake-2

  • 1/4 cup soy sauce

  • 2 tablespoons honey

  • 2 cloves garlic, minced

  • 1 tablespoon grated ginger

  • 2 cups jasmine rice

  • 4 cups water or chicken broth

  • Salt and pepper to taste

  • Green onions for garnish

Instructions:

Put sake, soy sauce, honey, garlic, and ginger in a small saucepan


Bring to a simmer and cook for 5 to 7 minutes, or until it gets a little thicker


Use salt and pepper to season the salmon fillets with


Get the oven ready by heating it up to 400F 200C


On a baking sheet that has been lined with parchment paper, put the salmon fillets


Use a lot of the sake glaze to cover the salmon fillets


Put the salmon in the oven for 12 to 15 minutes, or until it's fully cooked and flaky when you use a fork


Rinse the jasmine rice under cold water until the water runs clear while the salmon bakes


Let it drain well


Add water or chicken broth to a medium-sized saucepan and mix in the jasmine rice


Once it starts to boil, lower the heat, cover, and let it cook for 15 to 20 minutes, or until the rice is soft and the liquid is absorbed


Use a fork to fluff up the cooked rice and keep it warm


Add sliced green onions to the top of the sake-glazed salmon that you serve over jasmine rice

String Bean Stew

String bean, potato, and spice stew is a hearty and healthy meal that is great for when you're feeling down.

Ingredients:

  • 500g string beans

  • 2 large potatoes, diced

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 4 cups vegetable broth

  • 1 can diced tomatoes

  • 1 tsp paprika

  • 1 tsp cumin

  • Salt and pepper to taste

  • 2 tbsp olive oil

Instructions:

In a big pot, heat the olive oil over medium-low heat


Add the minced garlic and chopped onions and saut until the garlic smells good


Place string beans and diced potatoes in the pan


Cook for 5 minutes


Add the vegetable broth and tomato chunks


Put in some cumin, salt, pepper, and paprika to taste


Cover and cook on low heat for 20 to 25 minutes, or until the vegetables are soft


If you need to, change the seasoning
